Moma's Puerto Rican Rice
Ingredients:
1 pound pork tenderloin
1 tablespoon oil
2 medium tomatoes ( diced )
3 cups water
2 small onions ( chopped )
1 tablespoon fresh garlic
2 tablespoons tomato paste
8 tablespoons butter
2 cups corn
1 can green bean
white seasoned salt ( adobo ) to taste
salt and pepper to taste
Directions:
In a medium skillet add oil and heat to medium high. Add pork and cook 8 to 10 minutes turning half way until browned. Remove from heat and dice into small pieces.
Add the remaining ingredients to skillet until well combined. Bring to boil then reduce heat to simmer.
Add pork to skillet and cover and let simmer for 1 hour.
Serve over rice. Add your favorite vegetable as a side dish to this delicious meal. Enjoy!
