Chicken & Broccoli Casserole

Ingredients:

  • 3 packages of 10oz frozen broccoli ( or fresh if you have it )

  • 4 chicken breasts ( cooked and diced )

  • 2 cans cream of chicken soup

  • 1 cup mayonaise

  • 1 teaspoon lemon juice

  • 1/2 teaspoon curry powder

  • 1 tablespoon butter

  • 1 cup yellow cheese ( grated )

  • 1/2 cup bread crumbs or crackers.

Directions:

  1. Season chicken breasts with salt and pepper. Grill until juices run clear. Dice into bite size pieces. Set a side.

  2. If using frozen broccoli, place in bottom of 9x13 casserole dish. If using fresh broccoli, bring large pot of water to boil. Cook broccoli for 5 minutes then drain off water and place into bottom of caserole dish. Broccoli should still be firm.

  3. In a separate dish, combine the cream of chicken soup, mayoonaise, lemon juice, curry powder and butter together and mix well. Pour over broccoli and coat evenly.

  4. Top dish with cheese and bread crumbs.

  5. Bake at 350 F for 45 minutes or until bubbly throughout.

  6. Enjoy!
