Abbey's Favorite Zucchini Bread


Ingredients:

  • 3 cups flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 2 tablespoons ground cinnamon

  • 3 eggs ( beaten )

  • 1/2 cup apple sauce

  • 1/2 cup oil

  • 1 cup white sugar

  • 1 cup brown sugar

  • 3 teaspoons vanilla

  • 3 to 4 cups grated zucchini

  • 3/4 cups oatmeal

  • 1 cup walnuts ( chopped )

Directions:

  1. Preheat oven to 325 F. Grease and flour two 8x4 loaf pans. Set aside.

  2. Sift flour, salt, baking powder, baking soda and cinnamon together in a bowl.

  3. In a separate bowl combine eggs, oil, applesauce, vanilla and sugars. Mix well.

  4. Add sifted dry ingredients to the creamed mixture and mix well.

  5. Stir in zucchini and nuts until well combined.

  6. Pour batter into prepared pans.

  7. Bake for 15 minutes, then add crumble on top>

  8. Continue to bake for and additional 25 to 45 minutes or until tester inserted in center comes out clean.

  9. Cool in pan for 20 minutes then remove from pan and set on cooling rack. Let completely cool.

  10. Enjoy!

Crumble Ingredients:

  • 1/2 cup oatmeal

  • 1/2 cup brown sugar

  • 1/2 teaspoon cinnamon

  • 1/4 cup melted butter

Directions:

  1. Combine all ingredients into mixing bowl and mix well.

  2. Sprinkle evenly on bread after cooking for 15 minutes.
