Fresh Peach Cake
Ingredients:
1 1/2 cup sugar
2 eggs
3/4 cups oil
1 1/2 cups mashed peaches
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
pinch of salt
Directions:
Mix oil, eggs and sugar well. add in peaches and combine. In a separate bowl mix flour, baking soda, cinnamon and salt. Add flour mixture to peach mixture and combine until flour is mixed in.
Pour into a greased 9 inch round pan, bunt pan or loaf pan.
Bake at 350 F for 30 minutes or until toothpick comes out clean.
While the cake is cooking start your sauce.
Ingredients:
1 cup sugar
2 teaspoons flour
1/2 cup butter
2 egg yolks
2/3 cups evaporated milk
1 teaspoon vanilla
Directions:
Combine all ingredients into a sauce pan. Heat to boil then reduce to medium heat until thick. Watch closely so syrup does not burn.
Once thickened remove from heat and set aside.
Remove cake from oven when cooked through and top with sauce.
You can also serve you cake with fresh peach slices and icecream, etc. Enjoy!
