Zucchini Bread
Ingredients:
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
3 eggs
1 cup vegetable oil
2 1/2 cups sugar
3 teaspoons vanilla
2 cups grated zucchini
nuts ( optional )
Directions:
Preheat oven to 325 F.
In a bowl combine flour, salt, baking soda, baking powder and cinnamon; mix well.
In a separate bowl combine eggs, oil, vanilla and sugar; mix well.
Add flour mixture to the creamed mixture and mix well.
Now add zucchini and mix.
Prepare 2 8x4 loaf pans by greasing them and coating with flour.
Pour even amount of batter into loaf pans and place in oven
Bake for 40 to 60 minutes; until center comes out clean.
Remove from oven and let cool in pans for 20 minutes. Then remove bread from pan and let completely cool on wire rack.
