Zucchini Bread

Ingredients:

  • 3 cups flour

  • 1 teaspoon salt

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 3 eggs

  • 1 cup vegetable oil

  • 2 1/2 cups sugar

  • 3 teaspoons vanilla

  • 2 cups grated zucchini

  • nuts ( optional )

Directions:

  1. Preheat oven to 325 F.

  2. In a bowl combine flour, salt, baking soda, baking powder and cinnamon; mix well.

  3. In a separate bowl combine eggs, oil, vanilla and sugar; mix well.

  4. Add flour mixture to the creamed mixture and mix well.

  5. Now add zucchini and mix.

  6. Prepare 2 8x4 loaf pans by greasing them and coating with flour.

  7. Pour even amount of batter into loaf pans and place in oven

  8. Bake for 40 to 60 minutes; until center comes out clean.

  9. Remove from oven and let cool in pans for 20 minutes. Then remove bread from pan and let completely cool on wire rack.

  10. Enjoy!
