Chicken and Curry

Ingredients:

  • 1/3 cup butter

  • 1 small onion diced

  • 1/2 bell pepper sliced

  • 1 tablespoon flour

  • 1/2 teaspoon garlic powder

  • 2 cups chicken broth

  • 1 1/2 teaspoon curry powder ( to taste )

  • 1 can mushrooms

  • 1 can tomatoes

  • 1 chicken breast grilled and diced

  • cooked rice

Directions:

  1. Heat butter in pan. Add onion, bell pepper, curry and garlic powder; cook for 2 to 3 minutes.

  2. Stir in flour to make a roux and let that cook for another minute. ( careful not to burn )

  3. Add tomatoes, salt and pepper to taste; cook an additional 4 to 5 minutes.

  4. Add chicken broth to pot and bring to a boil, then reduce to simmer.

  5. Add chicken and serve when slightly thickened, over rice.

  6. Serve with veggies and enjoy!
