Chicken and Curry

Ingredients:
1/3 cup butter
1 small onion diced
1/2 bell pepper sliced
1 tablespoon flour
1/2 teaspoon garlic powder
2 cups chicken broth
1 1/2 teaspoon curry powder ( to taste )
1 can mushrooms
1 can tomatoes
1 chicken breast grilled and diced
cooked rice
Directions:
Heat butter in pan. Add onion, bell pepper, curry and garlic powder; cook for 2 to 3 minutes.
Stir in flour to make a roux and let that cook for another minute. ( careful not to burn )
Add tomatoes, salt and pepper to taste; cook an additional 4 to 5 minutes.
Add chicken broth to pot and bring to a boil, then reduce to simmer.
Add chicken and serve when slightly thickened, over rice.
Serve with veggies and enjoy!
