Pork Medallions

Ingredients:

  • 5 tablespoon butter

  • 1 shallots ( chopped fine )

  • 1 4.5oz jar mushrooms ( drained )

  • 1 tablespoon oil

  • 1 pound pork tenderloin ( sliced )

  • 1/8 teaspoon salt and pepper

  • 1 tablespoon dijon mustard

  • 1/2 cup whipping cream

  • 1 tablespoon apple juice

Directions:

  1. Melt 2 tablespoons of butter in skillet over medium heat. Add shallot and mushrooms, cook and stir 1 minute or until tender. Remove from skillet.

  2. Add remaining 3 tablespoons of butter and oil to skillet. Add pork, cook 8 to 10 minutes or until brown ( no longer pink inside ) turning half way to brown both sides. Sprinkle with salt and pepper.

  3. Remove pork from skillet. Cover and keep warm.

  4. Gradually add apple juice to skillet. Stir in mustard and cream. Bring to a boil for 1 to 2 minutes or until slightly thickened, stiring constantly.

  5. Add mushroom mixture. Cook 1 minute, then spoon over pork slices.

  6. Serve with favorite vegetables. Enjoy!
