Blueberry Muffins

Ingredients:

  • 1 1/2 cup unsalted butter

  • 1 cup sugar

  • 2 eggs

  • 1 cup sour cream

  • 1 teaspoon vanilla

  • 1 3/4 cup all-purpose flour

  • 2 tablespoon baking powder

  • 1 cup frozen blueberries

  • 1/4 cup unsalted butter

  • 4 tablespoons all-purpose flour

  • 6 tablespoons sugar

Directions:

  1. Cream together 1 1/2 cup butter softened, 1 cup sugar and 2 eggs. Gently add 1 cup sour cream and 1 teaspoon vanilla.

  2. In a separate bowl combine 1 3/4 cup flour and 2 tablespoons baking powder and mix into wet ingredients until flour disappears. Gently stir in 1 cup blueberries.

  3. Spoon into muffin tins. Top with topping before baking.

Topping:

  1. Cut together 1/4 cup cold butter, 4 tbspoons flour and 6 tablespoons sugar. Spoon onto muffins before baking.

Bake at 350 F for 25 to 30 minutes ( or less ).
