Osaka Grill's Garlic Chicken
Ingredients:
Garlic Butter
1 tablespoon vegetable oil
6 garlic cloves, finely chopped
3/4 cup (1 1/2 sticks) salted butter, at room temperature
1 tablespoon plain yogurt
Chicken
4 tablespoons vegetable oil
4 (6-ounce) boneless chicken breast halves, cut into 3/4-inch cubes
4 garlic cloves, sliced
1 sprig fresh rosemary
12 button mushrooms, sliced
1/4 cup Garlic Butter
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh Italian parsley
Directions:
1. To make the garlic butter: Warm 1 tablespoon oil in a small pan over medium heat. Add the garlic and cook until fragrant, about 40 seconds. Remove from heat and let cool. In a small bowl, add the butter, yogurt, and garlic and stir until well blended. Cover and refrigerate until ready to use. 2. To cook the chicken: Heat 3 tablespoons of oil in a large pan over medium-high heat. Add the chicken, garlic, and rosemary. Cook until golden brown, about 8 minutes, stirring occasionally. Transfer to a plate. 3. Heat the remaining 1 tablespoon of oil in the same pan over medium-high heat. Add the mushrooms and cook until tender and their liquid is released, about 4 minutes. Discard the rosemary, return the chicken to the pan, and stir to combine. 4. Remove from the heat. Add the Garlic Butter and stir until melted. Season to taste with salt and pepper. Sprinkle with the parsley and serve.
