Raspberry Cream Cheese Bars


This yummy morsel was introduced to me by my brother. It is delicious and is always eaten up when we take it to parties. This recipe is really quick to create and disappears just as quickly. Enjoy

Ingredients:

  • 1/2 Lb Butter; Softened

  • 1 Cup Sugar

  • 2 Cups All Purpose Flour

  • 1 Cup Rolled Oats

  • 12 oz Cream Cheese

  • 3/4 Cup Sweetened Condensed Milk

  • 2/3 Cups Raspberry Jam, Softened

Directions: Step 1: cream butter and sugar in mixer until well combined. Step 2: add flour and oatmeal and mix gently to make a crumbly dough. Step3: pat 2/3 of dough into buttered 9x13 pan, set aside 1/3 dough for topping. Step 4: combine cream cheese and sweetened condensed milk in mixer and beat until smooth, this will be a fairly thick mixture. Step 5: drop cream cheese mixture onto crust and spread with back of metal spoon or metal spatula. Step 6: soften jam in microwave until pourable, and spread over cream cheese mixture. Step 7: crumble remaining dough onto top of raspberry preserves. Step 8: bake at 350°F for 30 to 45 minutes, or until crust is lightly browned. Step 9: let cool and cut into bars; enjoy!
