Mexican Street Corn
I was first introduced to this amazing food while living in Chicago, Il. There was a street vendor that parked their cart outside of a grocery store and would sell these wonderful marvels for a dollar each. We would seem to make it by there at least 3 times a week and pick up one of these wonderful power packed delights. If these dont make your taste buds scream for joy, nothing will. I have intoduced these to my family and it is a hit for them as well. Go ahead a try it if you dare.
Ingredients
6 large ears of corn, husked and silks removed
ancho chile powder
liquid butter
mayonnaise
lime juice
cotija cheese
Directions
Boil your ears of corn according to package directions. Once it is cooked, remove the corn when you are ready to prepare so they are served warm.
When ready to serve, remove one ear of corn and apply your mayonnaise to all sides of the corn.
Next roll the corn in cotija cheese then sprinkle with chile powder and give a little squirt of liquid butter on each side.
Last squeese on some fresh lime juice and serve hot.
These babies are delicious and will send your taste buds to the next level.
