Honey Glazed Carrots

Ingredients:

  • 1 tablespoon oil

  • 2 lbs carrots cut into 1 inch lengths

  • 1 can chicken broth

  • 1/2 cup honey

  • 2 tablespoons redwine vinegar

  • salt and pepper to taste

  • butter

Directions:

  1. Heat oil on med high. Add carrots and cook for 2 minutes; add honey, broth, vinegar, salt and pepper and bring to a boil then reduce to simmer, cover and cook another 10 minutes or until crisp tender;

  2. Uncover and cook over med high until liquid is syrupy; about 7-9 minutes more.

  3. Remove from heat and add butter, salt and pepper.
