Ham and Potato Casserole

Ingredients:

  • 2 cups dices ham

  • 1/4 cups melted butter

  • 1 1/2 cups grated cheese

  • 1/3 cups chopped green onion

  • 6 medium potatoes

  • 2 cups sour cream

  • 1 can cream of chicken soup

Directions:

  1. Peel and dice potatoes into 1 inch cubes. Place in stock pot and add water; bring to boil for 10 to 15 minutes. Drain water and set aside.

  2. Mix the rest of the ingredients in a large bowl.

  3. Pour potatoes into sauce and mix until potatoes are completely coated.

  4. Place mixture into 9x13 casserole dish. Add salt and pepper to taste.

  5. Cover with tin foil and cook at 350 F for 30 to 45 minutes.

  6. Serve with a side of veggies and enjoy!
