Feel Good Waffles
Yummy waffles that are quick and easy to make! I will tell you that these are my kids favorite breakfast food. They will eat these with or without syrup or toppings. This is one of those foods that my kids will grab as finger food and head out the door to school. These are definately kid tested and a hit at my home. May these find their way into your home and into your kids list of favorite foods.
Ingredients:
2 cups all-purpose flour
4 teaspoons baking powder
1/4 teaspoon salt
2 cups buttermilk
6 tablespoons vegetable oil
2 eggs, separated
1 teaspoon vanilla
1/2 teaspoon cinnamon
Directions:
Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder and salt. Stir in buttermilk, oil, egg yolks, vanilla and cinnamon until mixture is smooth. In a separate bowl, beat egg whites until soft peaks form. Gently fold egg whites into batter.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden; serve hot.
Any extras make great leftovers. Just put into a bread bag and freeze. These will warm up quick in the toaster or microwave. Enjoy!
