Mashed Yukon and Sweet Potatoes
A savory mashed sweet potatoes recipe. Combining yukon and sweet potatoes is brilliant! A perfect holiday side dish. Super easy and seriously delicious.
Serving: 6-8 as a side
Ingredients
7 medium (2 lbs) yukon potatoes, peeled
2 medium (1 lb) sweet potatoes, peeled
1 small onion, peeled and halved
2 bay leaves
3 garlic cloves
½ Tbsp salt (we use sea salt)
4 Tbsp unsalted butter, melted
2 heaping Tbsp sour cream
Bacon bits and chives for topping (optional but highly recommended)
Instructions
Peel and dice yukon and sweet potatoes into ½" cubes, then place them in a large pot. Add onion, 2 bay leaves, 3 garlic cloves, enough water to cover the potatoes and place over medium/high heat.
When potatoes start to boil, add ½ Tbsp salt then reduce heat to med-low, partially cover and cook for 10-12 min. Potatoes are done cooking when easily pierced with a knife. Remove and discard, onion, garlic and bay leaves and drain the potatoes.
Mash potatoes until uniform in color then mash in 4 Tbsp melted butter. Finally, add 2 heaping Tbsp of sour cream and mash until smooth. You can use a potato ricer or
hand mixer to get it perfectly smooth if desired.
Notes
We make our own bacon bits by chopping the bacon then sautéing it in it's own fat on a non-stick skillet. Once bacon bits are brown, remove to drain on paper towels with a slotted spoon.
